Local foods have been trendy for a few years, but for people who hunt and fish up north they’ve been in style for longer than that. The Northland in fall is inextricably tied to its wild game. For at least ten years (check out this article from 2006!) we’ve been celebrating the season with good beer and good food.
Our beer partner is Castle Danger Brewery, which has been brewing “dangerously good ales” since 2011. After they outgrew their three-barrel brewhouse in Castle Danger, they opened a new taproom and brewery in Two Harbors just 15 minutes away from Grand Superior Lodge. The founders, Clint and Jamie McFarlane, have the philosophy that the best beers to create are the ones that break new ground:
“Castle Danger beers are all designed with a flavor profile in mind. We may start with a base style, but expand upon it to create something unique. There are hundreds of great beers that are true-to-style available in the beer market. We prefer to use traditional brewing practices to produce unique, flavorful beers. In our minds, this is the only way to approach brewing.”
We feel the same way about flavors. Rather than keeping the menu tried-and-true, we start with the same wild meats and mix it up with sauces and techniques to give our repeat guests something new to look forward to. Here’s what we’re planning for this year’s menu.
From the Land
- Grilled Venison Steaks with Wild Rice
- Oaxacan Rabbit with Cherry Tart Sauce
- Chef Carved Bison Prime Rib with Blueberry Demi-glace
From the Air
- Pan Seared Breast of Duck with Blackberry Demi-glace
- Baked Pheasant in a Plum Gravy Sauce
From the Sea
- Crab Stuffed Walleye with Citrus Beurre Blanc
- Salmon Milan, Cherry Tomato and Garlic Cream Dill Sauce
- Garlic Mashed Potatoes with Duck Fat
- Grilled Asparagus with Balsamic Reduction
- Maple Roasted Sweet Potatoes with Bacon
- Baby Carrot Tops
- Wild Rice Baguettes and Cinnamon Butter
Your dinner buffet will include an assortment of fresh lodge-baked desserts.
If you stay the whole weekend (which we recommend), it’s even better. First of all, you’ll have all day Saturday to check out Gooseberry Falls, hike the Superior Hiking Trail, or just chill indoors in the hot tub or sauna. The rooms are cozy with Northwoods inspired décor and amenities like fireplaces and whirlpool tubs. Possibly more important, there’s a Friday reception just for full weekend guests. You’ll try cocktails from Johnson Brothers Liquor Company along with your beer as you dig into lamb lollipops, salmon basil roulade, and smoked duck in garlic quesadillas.
